For Aitor, cooking is not just a job: it is identity, it is a language that explains who he is and where he comes from.
Morrudo is the life and gastronomic project of Aitor Lorente, a chef trained at the Luis Irizar School (SS) and with experience in places like Remigio, Castillo de Gorraiz, Zuberoa, Alameda and Echaurren.
After years of learning, Aitor returns to his hometown to create a space that represents his understanding of Navarrese cuisine: respect for the product, precise technique, memory of the territory and a sensitivity that seeks to tell stories through each preparation.
At Morrudo we work with local producers, select seasonal ingredients and build a cuisine that evolves with the landscape.
